Croque Madame

Serves two; approx 10 minutes to make

A note from Jake:  this is a classic French sandwich that we modified for our own good, the French version is a little heavier with a classic hollandaise sauce poured over top. (Trying not to have a heart attack yet)

Here’s a tip! Great with a glass of Champagne or Bloody Mary, sometimes it’s one of those days!

 

Here’s what you need:

  • 1 plain Kim and Jake's bun split in half and lightly toasted or roasted with butter in a pan

  • 2 eggs (in shell) boiled in water for 7 minutes then cooled under cold water

  • 2 thick slices country ham

  • 1 thick slice Colby cheese cut in half

  • 2 chives sliced

  • 2 tablespoons butter 

 

Here’s how to get it done:

  1. Preheat your oven to 400 degrees.

  2. Put eggs in in a 1-quart pan with 4 cups of boiling water, set timer for 7 minutes (when timer goes off, drain eggs and soak under cold water).

  3. While eggs are cooking, put split bun on an oven proof pan.

  4. Add 1 tablespoon of butter to each bun and spread to edges.

  5. Top bun with ham first then cheese

  6. Put bun stack in oven and set timer for 7 minutes (cook until cheese is bubbly)

  7. Remove from oven and allow to cool just slightly, gently shell cooked eggs.

  8. When cool enough to handle, remove bun stack from oven and onto serving plates.

  9. With your fingers tear each egg in half over top of the toast stack (the egg should have a translucent center with a slightly runny yolk)

  10. Eat with fruit salad or avocado on the side
