Serves two; approx 10 minutes to make
A note from Jake: this is a classic French sandwich that we modified for our own good, the French version is a little heavier with a classic hollandaise sauce poured over top. (Trying not to have a heart attack yet)
Here’s a tip! Great with a glass of Champagne or Bloody Mary, sometimes it’s one of those days!
Here’s what you need:
-
1 plain Kim and Jake's bun split in half and lightly toasted or roasted with butter in a pan
-
2 eggs (in shell) boiled in water for 7 minutes then cooled under cold water
-
2 thick slices country ham
-
1 thick slice Colby cheese cut in half
-
2 chives sliced
-
2 tablespoons butter
Here’s how to get it done:
-
Preheat your oven to 400 degrees.
-
Put eggs in in a 1-quart pan with 4 cups of boiling water, set timer for 7 minutes (when timer goes off, drain eggs and soak under cold water).
-
While eggs are cooking, put split bun on an oven proof pan.
-
Add 1 tablespoon of butter to each bun and spread to edges.
-
Top bun with ham first then cheese
-
Put bun stack in oven and set timer for 7 minutes (cook until cheese is bubbly)
-
Remove from oven and allow to cool just slightly, gently shell cooked eggs.
-
When cool enough to handle, remove bun stack from oven and onto serving plates.
-
With your fingers tear each egg in half over top of the toast stack (the egg should have a translucent center with a slightly runny yolk)
-
Eat with fruit salad or avocado on the side
