Servings: 2 Time to make: 15 – 20 minutes
A note from Jake: this is a super easy and fun recipe to do with a group or with your kids. Our son August likes to put his own together so he gets exactly what he wants. Can be made in a toaster oven for an even faster turn around.
Here’s a tip! Great with a glass of Chianti or Barbera, two light Italian reds with good acidity and balance.
Here’s what you need to make the pizzas:
-
2 Herb and Olive Oil Kim and Jake's bun split in half and lightly toasted or roasted with olive oil in a pan
-
Kim and Jake’s red sauce (recipe to follow)
-
Your favorite toppings
To make the sauce:
-
1 quart crushed tomatoes
-
2 cloves of peeled garlic, crushed with your palm
-
2 tablespoons olive oil
-
2 sprigs fresh rosemary
-
2 sprigs fresh thyme
Here’s how to get it done:
-
Preheat your toaster oven or regular oven to 400 degrees.
-
Heat 2 tablespoons of olive oil in a 2 quart sauce pan.
-
When the oil is hot but not smoking add garlic, rosemary, and thyme (sprigs and all)
-
Allow to heat and fry for two minutes spooning oil over the trio
-
Remove from heat and allow to sit for 3-4 minutes, then remove trio and discard.
-
Put pot back on heat and add crushed tomatoes. Season with salt and pepper and bring up to a simmer, stirring occasionally. (after 5 minutes remove from heat)
-
While sauce is heating prepare you chosen ingredients, cutting and cleaning as needed.
-
Place open faced buns onto a pan lined with aluminum foil and apply a big spoonful of sauce to each, spread with cheese and toppings and bake preheated oven for 7 – 10 minutes.
