Delicious french toast with a Twist (with a capital tea). Perfect way to add delicious energy to your morning breakfast.
Ingredients - makes 4 servings

8 slices of Peasant Loaf

2 eggs

½ cup milk of choice

1 ½ teaspoons matcha

1 tablespoons pure maple syrup

1 teaspoon vanilla extract

1-2 tablespoons butter for frying

Whipped cream for topping

Matcha dusting for topping

Combine the eggs, milk, matcha, maple syrup, and vanilla into a blender. Blend until you get a smooth green milk mixture. Pour into a shallow bowl.

Heat a large skillet over medium high heat and add a tablespoon of butter. Once melted, dredge a slice of the bread into the matcha mixture until well coated. Place into the hot pan and cook for about 2 minutes per side until golden brown. Repeat with the remaining slices of bread. Add more butter halfway through if necessary.

Serve the french toast with fresh whipped cream, maple syrup, and a light dusting of matcha if desired.
