French Toast

What you need:

  • 4 large eggs

  • 1/4 cup coconut sugar or honey

  • 2 tsp pure vanilla

  • 1 tsp salt

  • 1/4 tsp fall baking spice or just cinnamon

  • 1/2 cup almond or coconut milk (or whole milk)

  • zest from 1/4 orange (optional, but really good!

  • 14 - 16 thick cut slices from Peasant Loaf or Just Plain Delicious Bun

Ideally prep this up the night before in medium bowl to let the bread soak overnight.

Here's how to get it done:

  1. Crack eggs into medium bowl

  2. Add everything except milk and firmly whisk for one minute together making sure everything is fully incorporated.

  3. Add bread 4 slices at a time flipping several times to fully coat (if you're doing this the night before add all the bread and toss gently then refrigerate tossing occasionally).

  4. In a large skillet or non stick pan on medium heat, add 1 - 2 Tbls coconut oil, avocado oil, or butter.

  5. Scoop bread from bowl with slotted spoon to let excess egg mixture drip off and place gently in pan so as not to splatter and fry each side for 2 min.

  6. Remove from pan and place on large plate in a warm oven while you repeat the process until all bread is used.

Enjoy with your favorite condiment: jam, honey, maple syrup, butter, almond butter...or just eat it.
